The best white clam sauce we located was at Macaroni Sciue Sciue [...] At Macaroni Sciue Sciue, the clams are fresh and delicate, with a light sauce made from the clams' juices, olive oil, garlic and white wine.
"Most customers want it al dente. If you bite through, you can feel the grain of the pasta," says Mario Ascione of Macaroni Sciue Sciue, who always cooks his pasta to order. "Some people think, 'Oh it's still not cooked.' "
