Chef Scott Conant’s Signature Cuisine
L’Impero’s appetizers demonstrate Conant’s talent for distilling complex techniques and ingredients into refined dishes with strong, clean flavors. His Seasonal Selection of Seafood features: marinated bluefin tuna and baby tomatoes garnished with mint, microgreens and a house-infused peperoncino oil; Argentinean shrimp with a parsely-celery root puree and a vibrant raw tomato broth; and sea scallop carpaccio, accented with preserved lemon, finely chopped baby onions and fleur de sel. Conant’s Fricassee of Seasonal Mushrooms is a decadent mélange of shiitake, black trumpet and chanterelle mushrooms cooked in chicken stock and truffle reduction, topped with fresh chives and served in a miniature copper pot.
